Tasting Notes

Paso a Paso Verdejo is a great example of the lovely indigenous Verdejo grape of Spain, at a very reasonable price. Verdejo is often likened to a tropical version of Sauvignon Blanc and it is a universally popular, dry white wine.

The intense aromas of tropical fruit with hints of lime get your immediate attention. It has equally full flavours of  melon and stone fruit flavours with a touch of citrus. There is an excellent balance of fruit and acidity coupled with good length. Paso a Paso  is a dry, smooth, fruity organic white wine at a great price.

About the Vineyards and Bodega

Bodegas Volver was founded in 2004 by Rafael Cañizares, whose family has been growing grapes for 4 generations. The family vineyards are 30 – 90 years old and consist of indigenous varieties which are all cultivated in a sustainable way with minimal intervention. Now Rafael’s daughter is studying viticulture and oenology and has already created her own wines under the supervision of her father.

Their vineyards are situated in central Spain in La Mancha at 650 – 700 metres. Grapes for this wine were hand-harvested from 35 year-old, low-yield vines; it is these older vines which provide grapes with full flavours.  “Paso a Paso” meaning “step by step”, defines the careful attention this wine receives at every stage of development, and it joins our growing list of organic wines.

About the Vintage

The 2025 growing season was dry (as usual) but with very high summer temperatures.  The yield was lower than 2024 but the quality was excellent. Organic vineyards are definitely faring much better at coping with extremes in the climate. Bodegas Volver’s sustainable, organic vineyard management, together with picking in the night hours and finally delicate pressing and winemaking, consistently achieve a wine with good balance of fruit and acidity.

Food match: Good with full flavoured fish and shell fish, especially crab and prawns. It will also partner chicken, oriental dishes and salads. Great on its own!
