Tasting Notes

Paso a Paso Verdejo is a great example of the lovely indigenous Verdejo grape of Spain, at a very reasonable price. Verdejo is often likened to a tropical version of Sauvignon Blanc and it is a universally popular, dry white wine.

Displaying attractive tropical fruit aromas with hints of lime and aromatic herbs, Paso a Paso Verdejo has flavours of melon and stone fruit flavours with a touch of citrus. It has a good balance of fruit and acidity and good length. A dry white wine made from the Spanish indigenous grape Verdejo, mostly grown in Rueda but now cultivated in other areas of Spain and in this instance by Bodegas Volver vineyards in La Mancha at 650 – 700 metres. Grapes for this wine were hand-harvested from 34 year old vines; these mature vines provide full flavours.

“Paso a Paso” meaning “step by step”, defines the careful attention this wine receives at every stage of development, and it joins our growing list of organic wines.

Bodegas Volver was founded in 2004 by Rafael Cañizares, whose family has been growing grapes for 4 generations. The family vineyards are 30 – 90 years old and consist of indigenous varieties which are all cultivated in a sustainable way with minimal intervention. Now Rafael’s daughter is studying viticulture and oenology and has already created her own wines under the supervision of her father.

The 2020 growing season was drier than usual and thus yields were some 30% lower. However, the fruit quality was good across the wide range of grape varieties grown in this region. Bodegas Volver’s sustainable, organic vineyard management, together with picking in the night hours and finally delicate pressing and winemaking, consistently achieve a wine with good balance of fruit and acidity.

Food match: Good with full flavoured fish and shell fish, especially crab and prawns. It will also partner chicken, oriental dishes and salads. Great on its own!
